Paneer Grilled Sandwich

Ingredients

Serves 2
• 50 gr. paneer (Indian cottage cheese)
• Vegetables of your choice
• (onions, tomatoes, green or red peppers, carrots)
• 4 slices of sandwich bread
• (white, brown, whole wheat,multigrain)
• Salt, pepper, red chili powder, to taste Butter for grilling

Whenever I am in hurry or have less time for cooking, I just chop, mix, and grill, and it does wonders for me and my friends.

Steps

1. Finely chop all the vegetables. Mash the paneer in a bowl and add the vegetables. Add salt, pepper, red chili powder to taste. Mix well.
2. Spread the mixture on 2 slices of bread. Top with another slice and grill the sandwich with some butter on top.

Best served with: Chili sauce, coriander mint chutney (green chutney), potato chips, and lemonade or a mocktail
