This Caesar salad with chicken is a folk version of the classic, which was once invented by an American chef of Italian origin, Caesar Cardini. By the way, Caesar Cardini came up with a salad by accident. Just one day there was nothing left in the restaurant kitchen but lettuce, olive oil, parmesan cheese, bread and eggs (during the Great Depression in the USA). It was then that Caesar decided to combine everything that was available in one dish. And, oddly enough, it was a success, so much so that in ten or twenty years the salad became one of the most popular in the world.

Our version of Caesar, of course, is “richer” and more satisfying. It has chicken fillet, popularly loved mayonnaise and cherry tomatoes. A simple Caesar salad with chicken can be served as a lunch or a light dinner – as you like!

Ingredients

For salad:
● large chicken fillet – 1 pc.
● white bread – 200 g
● Eggs – 2 pcs.
● Lettuce leaves – 150 g
● cherry tomatoes – 200 g
● hard cheese – 150 g

For sauce:
● garlic – 1 clove
● vegetable oil – 1-2 tbsp. l.
● mustard – 1 tsp
● mayonnaise – 100-150 g
● salt, pepper – to taste

Steps

1. Prepare the ingredients for your Chicken Caesar Salad. First, boil the chicken fillet. To do this, wash it, place it in a saucepan and fill it with hot water. Bring to a boil and cook for 30 – 45 minutes. Let cool.
2. While the chicken is cooking, make the salad croutons. To do this, cut off the crust from the bread, and cut the crumb into cubes. Place them on a baking sheet lined with baking paper and place them in an oven heated to 160°C for 10-15 minutes. They should dry out and become crispy. Let cool.
3. Hard boil quail eggs for salad. To do this, place them in a ladle, fill it with cold water and bring it to a boil. Boil for 5 minutes. Drain the water, cover the eggs with cold water and let cool. Clean and cut in half.
4. Wash the lettuce leaves and dry them well on a paper towel. Tear with your hands.
5. Cut the chicken fillet into small cubes. Wash cherry tomatoes, dry and cut into halves.
6. Cut half of the cheese into cubes, the rest – grate on a fine grater.
7. Now make garlic sauce. Pass the garlic through a press into a small bowl. Add vegetable oil, mustard, mayonnaise, salt and pepper to taste. Mix thoroughly.
8. Place half of the lettuce leaves on a flat plate and pour over them with a small amount of dressing. Then lay half of the crackers and chicken fillet. Pour sauce over again. Put the remaining lettuce leaves, croutons, chicken fillet and diced cheese.
9. Drizzle with remaining garlic sauce. Garnish a simple Caesar salad with chicken with cherry tomatoes and quail eggs. Sprinkle with grated cheese and serve immediately.

Useful Advice
To make a simple Caesar salad with chicken especially tasty, the fillet can be fried in a small amount of oil or wrapped in foil and baked in the oven until tender.
