Red Curry Salmon

My best friend gave me a recipe book that she wrote for me before I got married. This recipe comes from that book. It is a super-easy dish that is perfect for company or a night in.

Ingredients

• 450 to 675 gr, fresh salmon (4 or 5 fillets)
• 60 gr. red curry paste
• 1 can (400 ml.) coconut milk
• 1 teaspoon sugar
• 1 tablespoon fresh coriander, chopped Salt and pepper, coriander leaves

Steps

1. Preheat oven to 180 C.
2. Whisk together curry paste and coconut milk in a medium size bowl. Mix in sugar and coriander. Pour mixture into a 9×13 glass baking dish. Lay salmon fillets flat in the dish and coat with the sauce.
3. Place in the oven and cook for 20 to 25 minutes, until the salmon is cooked but not dry.
4. To serve, add salt and pepper to taste and garnish with coriander leaves.

Best served with:
White rice or noodles and asparagus or broccoli.
