Gazpacho

Ingredients

• 7 to 8 Medium-sized Tomatoes, sliced into quarters (see recipe notes)
• 1 small White Onion, roughly cut in cubes
• 1 clove Garlic, core removed (see recipe notes)
• ½ Cucumber, peeled and cut in cubes
• 1 Italian Long green pepper, deseeded and cut in cubes
• 4 tbsp Olive Oil
• 1 tsp Sherry vinegar
• Salt to taste
• Croutons, for topping
• Red bell pepper, for topping
• Cilantro. For topping
• Avocado, for topping
• Strawberries or cherries, for topping

Method
1. Start with adding tomatoes, Italian green pepper, garlic, onion, and cucumber.
2. Blend the ingredients at high speed to make puree.
3. Add vinegar, and a pinch of salt, keep blending the mixture.
4. Now slowly add the olive oil in the blender till blending on high speed to emulsify the soup.
5. Add water if the consistency is too thick (see recipe notes)
6. Strain the puree for the smooth consistency. This will also remove the skins and seed if remaining.
7. Now let it refrigerate for 2 hours at least or until it is very, very cold. (see recipe notes)
8. Serve super chilled Gazpacho with the topping of croutons, red bell peppers, cilantro, avocado, cherries, and strawberries. (see recipe notes)

Recipe Notes
• Always use the red, vine-ripened tomatoes for the gazpacho. Green salad tomatoes are not ideal for the recipe. We are cutting the tomatoes in quarters and keeping the seed in too.
• We are removing the core of the garlic since it will give the bitter taste in the gazpacho.
• If you are serving the gazpacho right away, add ice instead of water or you can use ice cold water for now and add ice after straining the mixture.
• Many people complain that their gazpacho has split in the refrigerator. Its ok if it happens to you. the olive oil in the soup solidifies due to cold temperature. You can just whisk the mixture rapidly to emulsify it again.
• You can set up a topping station for everyone to choose their topping according to their taste and personal preference. Here are the traditional topping ideas except the one we have already mentioned: tart cherries, marinated cherry tomatoes or fresh ones, diced nectarines, red onions, cucumber, raw onions and even hard-boiled eggs.
