Flaming Chicken Fajitas

Perhaps one of my all-time favourites, this Mexican dish is great to enjoy a Saturday night in with your loved ones whilst watching a movie classic! Bringing out the amazing flavor of the chicken is a key to this amazing dish and this is done thanks to the chili, lime, peppers and onions which mix magnificently with it. Whetten your appetite whilst listening to the sizzling sound and inhaling the aroma, then get ready to enjoy your taste of Mexico with this dish that’s just a mere 397 calories!

Ingredients

• 24 oz chicken breast cut into 1/2-inch slices
• 2 heaping teaspoon chili powder
• 2 teaspoon ground cumin
• 1/2 teaspoon salt
• 6 heavy dashes ground black pepper
• 2 tablespoon cooking oil
• 4 tablespoons unsalted butter
• 2 small red onion thinly sliced
• 2 small green bell pepper thinly sliced
• 2 tablespoon fresh lime juice
• Cilantro for garnishing
• Lime wedges
• Tortillas

Steps

1. Marinate the chicken breast with the chili powder, cumin, salt and black pepper for 10 minutes.

2. Heat up a cast-iron frying plate / pan and add the oil and butter. Cook the chicken until it is slightly darkened on the surface. Set the chicken to one side of the pan then add the onion and bell pepper. Cook for 30 seconds and stir to mix it in and blend with the chicken. Drop in the lime juice, then stir to blend well. Finally, add cilantro over the top and serve hot with some lime wedges and tortillas.
