Nasi Rawon
Ingredients
• ½ pound Beef Shank, cut in cubes
• 2 Kaffir Lime leaves
• 1 lemon grass
• ½ inch Galangal
• ¼ tsp black pepper
• ½ tsp sugar
• Salt to taste
• 2 ½ cup Water
• 1 tbsp Oil
• 3 shallots, chopped
• 1 clove garlic
• ¼ inch Ginger
• 2 Candlenuts
• 1 Red Chili, fresh
• ¼ tsp Coriander seed, grounded
• ¼ tsp Cumin seed
• ¼ tsp Turmeric powder
• 1 Kluwek, steep in hot water (see recipe note)
• 1 Spring Onion, chopped
• Sambal, for ganish

1. Start with blending the spice paste. in a food processor of a mortar and pestle make a smooth paste out of shallot, garlic, ginger, candlenuts, chili, coriander seeds, cumin seed and turmeric powder. Set it aside.
2. Take a pot and add water and beef in it. Let it simmer on low heat until tender. (see recipe notes)
3. Once the beef is cooked and tender, turn of the heat and set it aside.
4. In a skillet or a pan, heat the oil on high.
5. Add the spice paste to the oil along with kaffir lime leaves, lemon grass, galangal, and cook it until fragrant. This will take around 2 to 3 minutes.
6. Now add pepper, sugar, kluwek and salt and cook for 1 to 2 minutes. (see recipe notes)
7. Add the paste to the beef pot and bring it back to low heat.
8. Simmer the soup for 20 to 25 minutes.
9. Taste to adjust the salt.
10. Add spring onions and let the soup simmer for 5 minutes.
11. Finally serve the soup hot with a dash of sambal on the top and rice on the side (see recipe notes)
Recipe Notes
• Kluwak nuts come from the kepayang tree. It is a common spice that is used in Indonesian and Malaysian cuisine. The black kluwak seed is what gives the soup that distinctive aroma and taste. It also gives the soup that dark brown and blackish color. We recommend steeping it in ¼ cup of water.
• Since we are simmering the beef, you can leave the pot uncovered. Cooking the beef will easily take 30 minutes to even an hour or so.
• Add a little water if you think the paste is about to burn. You can add the beef stock from the pot as well.
• You can serve the nasi rawon with naan bread or noodles too. You can use bean sprout, peanuts, and lime wedges for garnish as well.
